Just built the wife a new PC, not the highest performing but way better than what she had.
I5-12600KF
Asus B610 MB
32GB DDR4
850W Montech Gold PSU

Is the build above able to use this GPU competently? She's currently got a 1080P monitor but I'm likely going to upgrade to a 1440.

Very well in my opinion.

I've got a similar build but with a 12700K and the B580 performs exceptionally with it.

Not for LLM based models. But OpenVINO style AI they're monsters (image recognition, etc)

tensor cores are very efficient at performing mixed-precision matrix math, used by things like pytorch and tenserflow. if you don't know any thing in the previous sentence, then don't bother with tensor cores. as those are mostly used for model trainings. the name "tensor core" is also a Nvda only thing that you won't find in intel (i mean yes, nvda now owns 10% of intel and things could change in the future. but that doesn't change the B580)
if you look at inference (meaning running your own modes), then you don't need tensor core to run, instead, a large vram would benefit as you could load higher precision models. 12G won't cut it, you better off getting the AMD AI MAX chips or apple M silicon for their unified memory. or nvda's dgx spark.
