we were able to use our various carbon steel woks on it flawlessly. both the flat bottomed one we have and the curved bottom one (which can be gotten at some costcos for $12?). we sometimes used a saucier and that also works great when we needed an extra burner.
yes, only the lower part gets hot, but the wok is designed to function that way. you can push your food up that needs a break and still get wok hei at the bottom. if you're doing 3 lbs of beef, you'd have to do that in batches in any home sized wok.
the wait time for 350 to 400F is a few seconds, unlike our old method (electric) which was slow. and still faster than our gas stoves and propane stoves. as i mentioned, the diff is the pinpoint accuracy/assurance the induction nuwave has.
because we can set it to a specific temp and hold that, we often used it to deep fry not just double fried chicken (orange chicken, general tso, tang sue beef) but french fries, onion rings, tater tots, buffalo wings, etc. i think i like this better than our breville deep fryer because that maxes out at 350 and then fluctuates 30 degrees up and down. with the nuwave, i can go to 390 and hold it easily. the breville fryer has a superior oil filtering system, but i find myself frying in the nuwave and then filtering into the breville. ha.
lastly, this wok introduced us to induction. we were going to upgrade from an electric stove to gas this year, but ended up going straight to induction. too bad my induction stove does not have a didgital temperature setting like the nuwave. that feature cost a ton more on the stoves we saw.

sorry but you'll never get wok hei without fire 🔥
Electric wok don't get hot fast enough. I use a cast iron wok on my gas stove. It takes about 10 mins to heat up, and cooks like a non stick. My food gets a nice sear on then, close to how the chinese restaurant does it on their carbon steel wok. I have a carbon steel wok, but I dont have the flame needed for it to sear.
