Weber performer.

Weber Vortex.

I position a steel brake line up into the bottom of the vortex, through where the vents are on the bottom of the weber. The other end of the line connects to a rubber hose, which goes to a pneumatic foot pedal, which goes to my air compressor the regulator set to 3 to 4 psi.

Gets hotter than hell. I do my wokka wokka on that.

What's a weber vortex? Is it one of these [vortexbbq.com] on a gas grill?

Yes exactly that. But this is on a charcoal grill, not gas. I fill it full of lump charcoal. The weber has a pop out center grate that my wokka wokka sits into perfectly.

Instead of buying a new gadget like this, I simply adapted what I already had.

It definitely gets hot enough with lump if you don't have an air compressor, but I can get my carbon steel wok near red hot with it.

This is where I got the idea - https://www.seriouseats.com/the-f...-the-grill

The only difference is I throw the vortex on the weber and that I have air injection if I need to get the temps up quick

I have this, it gets insanely hot. It is amazing. You need to season the wok really well.

You have to turn it blue. To achieve this, you need to use very high heat. Go from one surface to another. The wok should be heated till the metal turns blue. Do your usual, oil it, let it smoke and the oil will burn to create that blue patina.

I got one of these when it was posted here from Woot. Thought it would be a great way to get into Wok cooking and to keep smells outside. So far i have used it once. Rest of the time it's just sitting outside on the deck taking up space rusting, even though i spend allot of time "seasoning" it, actually i spent more time seasoning it than cooking on it. While they are nice, i guess if you are not actively using one, you won't get into it because you have it on your deck.
