Briefly highlighting that 1800w on a standard 120v outlet is 15amps, which is the max draw for most standard outlets/circuits (electricians, please correct me if I'm wrong, that's what it is in my old house though). I'd consider whether this is overkill, and if so, it might be more trouble than it's worth.

This is correct. However, code often dictates 20A circuits in kitchens these days. YMMV, and it's a good idea to check your breaker because they're almost never installed with 20A receptacles.
