What is the XLR output(s) for?
I have a similar all in one (an RME ADI-2 DAC FS), and the XLR outputs are great to drive monitors, which are typically amplified. Even better this leaves the RCA output free, and you can use that to output to a sub for fuller sound given most desktop monitors have relatively small woofers. For example, I have focal solo6 monitors, which have big cabinets and barely fit on my desk, but only have 6.5" woofers. Adding a subwoofer made this setup nearly perfect! Having an all in one with XLR+RCA outputs is awesome!

Any ideas on what to get if I need to have the unit power the bookshelf speakers, and I want to have a sub as well?

I ended up chaining a desktop DAC/AMP(the AMP was for when I used headphones, like for gaming/streaming) to an old A/V receiver that I also got cheap (a few hundred) to drive the speakers. I used a Pioneer Elite SC-79, which was a fantastic receiver in it's time, with great amps, the ability to biwire, and great sub management. It was a $3000 MSRP receiver, but isn't worth much now because no 4k support for it's HDMI, no HDR, no atmos, etc. But, you don't need any of that to add a sub (with sub base mgmt software so that you can make the sub do exactly what you want) and to amplify a pair of desktop speakers. As a bonus most receivers also have room correction software including sub mgmt that helped make my setup sound that much better. I also thought it was cool that I could hook up a cd player to play some old SACD and DVD-A disks, but I did that literally zero times after the test run when I set it up
There are lots of receivers that meet these requirements that are super cheap nowadays, but are built like a tank. The downside is you need a place to put a 19" heavy component, and it makes your setup a bit more complicated... for example I think I had like 4 different physical volume controls in my chain
I looked at other options that were simpler and smaller, but nothing came close to the features and performance as an old receiver for less than a couple of thousand. It has been a while so maybe there are options to amplify speakers and add bass management for PC desktops that also include a GOOD headphone amp and USB DAC, but I don't know what they are.
I ended up moving to amplified monitors because I have been piecing together for years an end game setup... the ADI-2 DAC is an amazing DAC/headphone AMP that has dual outputs to support both monitors and a sub, and I love the Focal sound signature, so once I was able to score a deal on these Solo6s which are amazing monitors designed for near field use, I was able to get rid of the receiver and make the setup way smaller and simpler.
