Never had a 3D printer before, it's plug and play, setup is easy, the slicer software (Orca Flashforge) is easy to understand, I watched a 10min Orca tutorial on YT.

Sure thinking about this printer, but is it much of an upgrade of my elegoo neptune 4+? I guess multicolor, can get an enclosure, and most importantly not a bed slinger...
the only thing holding me back is I'd like to eventually print some beefier materials like PET-CF/PA6-CF20... probably just need a hardened steel nozzle? I just see they arent officially supported.

If you care only about noise levels, no. The E3V2 is very quite, one of the quietest 3D printers I've ever used. Also the E3V2 prints a bit taller (~250 vs 220mm vertical, same XY).
However, if you are thinking about speed, print quality when prints are more challenging, being net works compatible, not messing with micro-SD cards etc, yeah this is better.
Really these are a lot faster (perhaps 2-3X faster in overall print time). These are also using the now common PEI or similar build plates (same size as those for the Ender 3 family). I don't have my printer on line but using the USB stick to move files is really nice. The screen interface is a bit smaller than the E3V2 but it does a lot more (shows a picture of the print for example). The screen doesn't look as nice as some of the capacities touch screens on others but I don't find it impacts the use of the printer. Well all that and it's multi-color... Also, the default slicer for the Ender 3V2 was Cura based. I think the current FF slicer is Orca based. I say think because with my 5M I am flat out using Orca.
