Amazon if you have Prime Card, has 10% Cash Back. I think this goes to 12% Cash Back if you opt for 7% Cash Back at shipping.
128GB model is $249 w/ Cardboard Hero ($45 value) and 3 months Horizon+
256GB model is $329 with Batman ($50 value) and 3 months Horizon+.
Just some more good options depending on what you are looking for.

I believe you are mistaken on how the cash back works. When checking out if it states 7% cash back, it is 5% from the Prime Card plus an additional 2% from selecting the slower shipping; Not 5% plus 7% from the slower shipping.

So if an firmware update goes bad, and you hate it, return it.

Yup, this is exactly why I bought a Nintendo Switch 2 there. It's considered a toy and doesn't fall under the 3-month electronics return window

Never used a Quest 2, the 3S is my family's introduction to VR. We have the Meta Horizon+ subscription and there's a bunch of games that use mixed reality. We've only scratched the surface really, but there's a lot of games and apps that use AR/MR. Get the Meta Horizon app and you can view the library

Similar situation as you. I got the PSVR2 for really cheap (Free), and I picked up the Adapter for cheap on one of the Target deals.
It was not that complicated to get hooked up and working with my Gaming rig. I saw people saying the hand controllers from PSVR2 can be a PITA, but my PC found them and synced them without issue.
With this setup, I could play both Alyx and Beat Saber without much effort.
Would I run out to buy a PSVR2 AND an adapter at retail to do this? No.
But at a discount like you are describing, its not a bad deal to be able to play VR Games on your existing PC.

If you have a usb-c that supports display port, yes, but you'll need a usb-c to dp cable.
