Having recently discovered that some (Idahoan) instant mashed potatoes are better than I remembered (e.g. not inedible) I'm now wondering... has this improvement happened across more brands? Are these edible? Or is it basically potato starch and flakes with boxed cheese powder like the macaroni stuff?

These are good but recommend using milk as suggested in the directions. Imo Idahoan have flavors that taste more real (buttery, red), but these taste very good if you use milk. Idahoan just need water.

You're not wrong they are much better, specifically certain flavors by Idahoan taste very good. They are real dehydrated potatoes. The home style buttery flavor and the red potato flavors are the most real to me. But others are good too, just perhaps more flavored so taste less homemade. Like these Betty Crocker 4 cheese are very tasty (just use milk per the directions), although not necessary tasting homemade.
And they are very convenient and quick if you have an electric kettle!
