The primary factors that degrade coffee are air, moisture, light, and heat. To keep your beans fresh, you need to protect them from these four elements. If you buy Lavazza whole beans in bulk and don't plan to use them right away, the freezer is a great option, but you need to do it correctly. Portion the beans into smaller, airtight containers or vacuum-sealed bags, so you can take out just what you need without thawing and re-freezing the entire batch, which ruins flavor. When you're ready to use a frozen portion, let the sealed container come to room temperature before you open it to prevent condensation from forming on the beans.

Concerned on the roast date though. I've been ordering from Amazon and its totally inconsistent. Last shipment I received, the beans were roasted back in March !! Prior to that , roast date was August.

I've stopped ordering from Amazon now and get different brands from Costco instore.
