ZWILLING knives have HRC 57-58. The 7" Hollow Edge Santoku has been a working horse in my kitchen. The hollow edge creates air pockets that help prevent food from sticking to the blade and allow for extra-thin, clean slices. It would make a perfect Christmas gift.
I use wood cutting board for vegetables to preserve knife edges. I use plastic cutting mat over my cutting board and a separate knife for raw meat to prevent cross-contamination. I use sharpening steel to hone my knives periodically, and sharpening stones to sharpen my knives twice a year.
