The v51 looks great. More importantly, the sounds are the same as on the flagship v71, even on the V31. But yeah, the v31 probably isn't worth it due to the lack of digital ports.
If anyone wants recommendations: promark or vater sticks are my gold standard. Promark might be overkill but they last forever. Test a few out at guitar center first to see what you like. Don't mix and match though. Sticks you use on an acoustic set should never be should be played on an electronic set afterwards (the chipping get ruin the mesh). For the throne, look at any online store and you can sometimes find porkpie or rocnsoc open box EX deals out there. Dont skimp out on a nice throne. Your back will thank you! Prepare to spend an extra $300 or so between the two.
You will also need a snare stand, hihat stand, and bass pedal. I'd focus on getting a nice pedal. DW5000 is probably the cheapest I would go personally but that is just my opinion. Cheaper options tend to have a higher ceiling to break for speed and control.
