Ultimate Collection 1-5 collect the main comics and one shots containing the main story, Volume 6 contains short stories that were published during the run but written by others and thus non-canon to the primary storyline, and Volume 7 is just a collection of rare art, covers, etc.
For the collector I'd recommend just getting the Ultimate volumes, but the color collections are nice too. I just don't think they've (yet) collected all of it like they did with Ultimate Collection.

That said I have vol 1 to 5 and got them all for similar prices or via various b2g1 sales and they're a nice collection. Trying to read classic turtles in its entirety is an absolute nightmare. All the collections are missing SOMETHING in that you'd need to buy singles to catch em all but when I researched it a few years ago this was the best and most affordable way to approach it.
