I already have the old color volumes (Book 1 through 4) which I think version mostly comprises? If you haven't read them, this is would be a great primer.

I believe Color Classics is incomplete. Ultimate Collection is 7 volumes compiling everything from the Mirage days, with added commentary from the creators (which is actually really fun to read). They're all presented in the original Black & White look from the first publications.
Ultimate Collection 1-5 collect the main comics and one shots containing the main story, Volume 6 contains short stories that were published during the run but written by others and thus non-canon to the primary storyline, and Volume 7 is just a collection of rare art, covers, etc.
For the collector I'd recommend just getting the Ultimate volumes, but the color collections are nice too. I just don't think they've (yet) collected all of it like they did with Ultimate Collection.

Also maybe note that volume 6 is out of print as far as I can tell and absurdly expensive in paperback. And I don't believe volume 7 got any paperback print at all. Not a huge deal I guess but if you are a completionist it sucks.

That said I have vol 1 to 5 and got them all for similar prices or via various b2g1 sales and they're a nice collection. Trying to read classic turtles in its entirety is an absolute nightmare. All the collections are missing SOMETHING in that you'd need to buy singles to catch em all but when I researched it a few years ago this was the best and most affordable way to approach it.
