Was really hard to find a model that had everything I considered important. Although my use case requires less power (i.e. a N150 would be plenty), I wanted something that would last me longer and this one seems to tick all the boxes (dual SSD support, i7, thunderbolt port, 2x2.5gb lan).My plan was to do a Plex/Jellyfin server, but I might expand it to do more now

Once a vendor signals their willingness to put malware in their devices, I consider that a hostile relationship with the customer, and I don't feel like that's worth the tradeoff in price. I would probably throw Linux on it anyway.

Do have to keep in mind that there are different classes of "malware". Many of us consider provider cellphones and Windows itself rife with malware, but a network chip backdoor for the PLA is all together different.
