Because it starts and ends on the day you subscribe in a year. you should purchase your membership by the 29th of October to get the October 2025 credit and the October 2026 $5 monthly credit.
Buying on 10/30-31 or 11/1-5 you may only get 12 $5 credits to use.
Obviously if you sign up on 11/1, your membership will end on 10/31/26, renewal on 11/1/26 so you'll only get 12 credits for your $49 at $5 each. Better to wait until about 11/5 or after to sign up if signing up in November so you'll get your $5 credit in both Nov 2025 and Nov 2026.
keep this in mind what day it is when signing up as you may cheat yourself out of a $5 credit since there won't be enough gap to get the 2025 (this month) credit and the next year 2026 credit for the same calendar month.

Amazon added prime benefit of overnight grocery free delivery $25+ and the prices seem fairly low for lots of things.

Wait, so the $5 credit can't be applied to online delivery orders, it's only for in-store and pick up orders only?
That would ruin this deal for me since my closest safeway closed, I'm not going to be shopping instore or picking up.
