Honestly polygon siskiu D6 SE is hard to beat for $999 - full suspension bike. Spend another $250 for better fork in a future and you are all set.

Stance 29 1 has better suspension (Crest 34 SL RCL vs just RCL, RockShox Monarch R vs. Suntour Raidon R) and brakes (Tektro Hydraulic vs. Tektro mechanical) but worse group set (SRAM SX 1x12 vs. more durable Deore 1x10).
I picked up the 29 1 knowing that, as swapping the rear derailleur to SRAM GX is cheap and easy once I wear out the SX.

For that price range I'd look for a used bike on Facebook Marketplace for $400-600. 3 years ago I bought a 26" full suspension XC bike (Cross Country) w 120mm fork travel, 100mm rear from 2010 and its been a blast. Ask them what year it is, search for reviews, and if people liked it a lot, it'll probably be a great bike. 26" wheel bikes sell for cheap bc most are looking for 29". 26" bikes are lighter too bc they're smaller. Give them a test ride. If you arent sure, test ride another till you find one that makes you smile.

A friend of mine just bought a Stance 29 1 and it came with a Marzocchi Z2 fork and not the Crest.

For Giant, the lower the number the better the build. 1 > 2

This bike (or actually the 29'' version is better for most adult men) has most of what you would look for:
-1x drivetrain which is simpler and more modern. This bike is SRAM SX which is the lowest, cheapest quality drivetrain I'd recommend (can be significantly improved by a step up on the derailleur)
-Dropper post is by no means a must-have but this one has one which is really nice
-Airspring fork which this bike has is by no means high end but it'll get the job done.
-It needs to fit. this price is for L and XL. If you are in XL, get the 29'' linked elsewhere in this thread. Personally I don't like 27.5'', but it was the dominant size for many years until everyone switched to 29'' about 7 years ago. If you aren't in the size guide for either L or XL, keep looking.
You will have lots of fun on this bike and can take it to most trails around you and it's going to be a bike worth repairing/upgrading. This is one of the better deals I've seen in a while.
