Either stability reasons or so that they can sell a better SKU with XMP enabled.

But, if the option is greyed out, that's a good sign that you can modify the BIOS and unlock a working function.

HP deal was better but proprietary Power Supply, Motherboard and GPU. Not worth it. I'm not sure about ACER, however HP was the first one to create proprietary GPU designs, I don't remember ever reading ACER was moving on the same direction.
