Can you upgrade the RAM? I tried researching and it seems like I should be able to, but I couldn't determine 100%. Is it too much to ask for a build like this with 32gb DDR5 and with at least 12bg VRAM?

You won't see that much RAM and VRAM at this price point outside of maybe refurbished laptops. You can upgrade the RAM; the CPU supports up to 256GB VRAM. As there are two RAM slots, you could buy two 64GB sticks for 128GB total.
