So Verizon updates apple servers after 60 days that's there is no SIM lock and the when the phone connects to apple server next time it gets unlocked. So rest or removing eSIM should not do any harm but then again that's what my understanding so a confirmation from someone who has done this before will be great.

You will be charged prorated charges and also activation fee after 3 days but as I mentioned activation fee can be voided from the bill automatically without talking to anyone. You do have to pay prorated charges for the time the line was active.

correct. I transferred eSIM from the unlocked 16 Pro bought Sunday to this new locked 16PM, waited for registration, then transferred back to the unlocked 16p. After waiting for a few hours, the unlock portal would not approve the request saying the phone belongs on someone else's account. So I transferred the eSIM back to the locked 16PM and tried unlocking directly from online account portal. That approved it immediately.

From all the various experiments I've done, I think it's safe to assume the phone you bought does not need to be unlocked on the same line that it was signed up with. You can safely pay off the phone and cancel the line and activate it on an existing ATT line for unlocking. Basically, as soon as the phone is paid off and the line is cancelled before you open the box, ATT recycles the IMEI back to Apple as Reseller Flex Lock policy and you can activate it on any carrier and follow their unlocking policy. In this case, ATT is still the most generous with its immediate unlocking loophole.
