If you can spend a bit more the 2 piece wusthof classic knives on slickdeals for 122.50 are much much better than these and the only 2 knives you need. Those are made in Germany and just awesome to use vs my cheap forged knives like these

Sure, but I'd argue that an entry level Shun for $80-90 is still inferior to a MAC TH80 or Tojiro for similar price. The Daovua V3 (not the older leaf spring ones) is probably better. Most Shun stuff you're paying more for the visual Damascus type stuff. The steel isn't any better. That said, I think people are buying $50 kitchen aid and thinking it's better than a $10 kiwi, and they are absolutely wrong.

Need recs on new knife set. The handles on the steak knives have cracked. It was a $50-100 set from cuisinart from a few years back. I'm torn between just getting a few steak knives and keeping the rest of the cuisinart knives from the set or getting the following below from Amazon

Personally I think the Wusthofs underperform pretty badly compared to a lot of cheaper stuff. Bolsters are awful, and the Wisthof's have a classic german "thick" blade, which means they cut much worse than a newer profile like the more Japanese knives which are half as thick at the back. Not saying the one you have is a bad knife, and frankly I think MOST people should be buying knives in person somewhere that will let them cut/handle a display, because how the knife feels in your hand is more important than the edge or retention imo.

In my opinion no, but it's also about use case (and my opinion is an outlier amongst knife snobs on this to be fair). None of the japanese style knives should be used for like cleaving through bones and stuff, they are extremely hard, thin and RELATIVELY brittle compared to say a thick German knife (see above comments on Whustoff). But for general meat cutting, vegetables etc it won't matter on a knife you are hand washing/drying and not using to cleave things with.

Oh man no argument there on there being better things than my Shun Classics at those price points. I got sold on the Shuns because I could handle them in person at Sur La Tab and Williams Sonoma when I was finally buying my first "good" knife. At the time I had never handled a D handle knife and it was a revelation on comfort for a pinch grip compared to the classic Germans with Bolsters lol. But yeah I wouldn't touch this set from Henckles or anything "Kitchenaid" (Almost certainly just renting their name out toa third party) makes on knives. I own the "double dude" henckle knife block with steak knives, it's my "garbage" when I don't have the time/energy to hand wash one of my good knives and they go in the dishwasher with the understanding that "if they die, they die".

I might pickup a Kiwi set at some point. I seem to be developing a bit of an addiction for trying random sub $50 knives of late, though the Shan Zu is so good that might be over lol. Blade geometry matters a lot, so I imagine them being thin bladed is a lot of why they cut well. Same reason a high end Whustoff won't cut as well as a knife by Babish even.

If you are interested in Zwilling 7" santoku, I would suggest getting one made in Germany instead of the one made in China. A friend of mine had the Chinese version Henckels for a couple of years and it became so dull that he was about to pay for professional sharpening. After I gifted him a German version Henckels, he threw away the Chinese made knife.

Both Zwilling Four Star and Tramontina Pro-Series are the work horses in my kitchen for at least 10 years. I use a separate knife to cut raw meat for sanitary reason. Tramontina Pro-Series is the only knife ever touched raw meat in my kitchen and it is dishwasher safe.
