I'm in the market for a solid knife, not too expensive, and I seem to always find that there are extremely negative reviews on Amazon claiming that the product is junk

I might pickup a Kiwi set at some point. I seem to be developing a bit of an addiction for trying random sub $50 knives of late, though the Shan Zu is so good that might be over lol. Blade geometry matters a lot, so I imagine them being thin bladed is a lot of why they cut well. Same reason a high end Whustoff won't cut as well as a knife by Babish even.

Both Zwilling Four Star and Tramontina Pro-Series are the work horses in my kitchen for at least 10 years. I use a separate knife to cut raw meat for sanitary reason. Tramontina Pro-Series is the only knife ever touched raw meat in my kitchen and it is dishwasher safe.
