Seems like a good way to speed run ruining a good knife.

If you don't want to maintain a good butcher block, look into rubber wood.

It's less porous and softer than bamboo, so it's just as antimicrobial while being less prone to absorbing water and less harsh on knives.

Totally get the knife concern. For me, I mainly went with a titanium board because it's non-porous and super hygienic — feels like a healthier option overall.
Honestly, I don't mind sharpening my knife a little more if the surface is clean and safe to use.

I always use an Oak cutting board, unless I'm cutting raw meat (like spatchcocking the turkey this morning), and then I do it on a plastic tray I stole from burger king.

My neighbor has a giant glass cutting board that has a lip all the way around. He believes it came from a huge 1970s microwave. Hopefully he leaves it for me in his will.

This thing is HEAVY duty. Doesn't warp, doesn't stain, and the double-sided design is actually useful.

Just remember that chefs are not using these in real kitchens.

There's no need to ruin knives over a nonexistent problem. Properly maintained boards are plenty hygienic for food. It's not surgery.
