I'm looking for a gaming PC under $2000, was hoping for RTX 5080, but 5070 TI might cut to. Is this a good deal? How good are Aorus builds in general?

A 5080 in a $2k build might be kind of tight. MSRP it's $250 more than a 5070ti so just from MSRP difference this would be over $2k by a bit. This also isn't even an x3D processor which is a shame for this expensive of a build. IMO the 5080 isn't worth the price increase over a 5070ti. The performance improvement is much less than the price increase and they are close enough that you'd have a hard time telling the difference between the two in a blind test. It doesn't really change the type of frame rate or settings you can play at.

Personally, I'd go for a x3D processor and a 9070XT build like

I'm looking for something closer to $1000. I could stretch a bit above that maybe, but this is definitely out of my price range.

But want an X3D processor, 32 GB RAM, and 5060 Ti or faster graphics card. I might just build from scratch like usual.

I'm going to say not possible now without screaming good deals. Going to PCPartPicker just a 7800x3D, 32gb or ram and an 8gb 5060TI is almost $900. You still need a MB, Cooler, case, storage, PSU. Even before memory prices went crazy that would have been hard but with that it's pretty much out of the question. You can't really fit two 300+ dollar parts into a $1000 budget.

Well, I mean closer to $1000 vs $1800, but like I said, I could stretch above that a bit, $1300 at the most before tax, assuming free shipping at least. I might have to compromise on the graphics card, 5060, otherwise will stick with my 1660 Ti for now.

I just upgraded to 24 GB in my current computer because I was pushing the RAM utilization pretty hard at 16 GB, nearly freezing my computer when it went crazy paging, so no way I'm going backwards. lol And my older memory won't be useful with a current gen motherboard.

I would buy this too if it weren't for having to drive for 2 days to my local MC.

I tend to ignore Micro center deals as the closest one is about 3 days drive round trip. From a price/performance perspective the 9700xt systems are probably a better deal but that's not a bad deal if it's the specs you are looking for.
