I have the pairing knife, and I use it for a lot of things I probably shouldn't lol just because it's my favorite knife. Hard to beat Wusthoff quality.
Is the quality of this light years ahead of Professional S Zwilling J.A Henckles [Germany], because I bought a 3 piece set in July for $91.

Actually they aren't. This Wusthoff set is made from X50 Cr MoV15, which is soft and won't hold an edge well. The Zwilling Pro are made from a high carbon steel with significantly better edge retention.
Finally, a $120 tool to slice my $3 frozen pizza and open Amazon boxes containing $2 glue. Plus, I can now cut my finger off with German precision instead of just hacking at it with my dull IKEA blade.

They're roughly the same and quality, but Wustoff is not known for discounting the way Zwilling does

What's the advantage of knives like these over getting something way cheaper and then having the old dude selling knives at the farmer's market sharpen it for $20?

Holding a sharp edge for longer. It's personal preference. All knives will need resharpening, just depends how long you want to go between sharpening.Also, how you handle the knife matters a lot.
