FWIW, I have the EAH-AZ80 (one model down from the Z100) and it sounds excellent (I'm pretty picky about sound quality). The only bad thing I can say about them is the approximately .5 sec latency, so they're not good for gaming, and you have to adjust the delay on your video player. My older Sony WH-1000XM3 had an approximately .3 sec latency. Apparently this can vary by Codec, so I'm not going to draw anything conclusive from it. Oh, and noise cancellation is not as good as an over-the-hear headset, even after trying different ear tips (this is probably true of any in-ear headphone).
Rtings has the numbers for the AZ100 [rtings.com].

I just bought the AZ100 and recently tried the Momentum 4. I had to return the Momentum due to ear pain while wearing Overall, I prefer the technics better. The sound quality, fit, and comfort are all better for me. I'm really enjoying these so far YMMV

I have the Z100s and the sound quality is amazing. How are you testing the latency? The Z100s support LDAC, that may help improve the latency over AAC.
