How does this work? It's labeled whole house but I'm seeing 7200w output. Even a 100amp service is 24kw so how does this actually connect into your panel? Does this mean the my main panel needs rewiring to move high priority circuits?

It isn't truly whole house without much more than this kit. You could do what you're suggesting with their panel which costs more, but only with the high priority circuits.

At 18,000Kw you can run your whole house as long as your AC is under 4 ton. You will need the smart panel and about 5,000W in solar panels. So roughly about another $3,000 and your go to go.

I like the simplicity of this system, but just throw the latest 300lb 16kWh battery on a hand truck (Ecoworthy or Humsenk) along with a cheap split phase inverter for either brand for like 2.5k all in.

They serve the similar purpose but this requires zero installation if you already have a transfer switch - simply hook up its 240V output to your transfer switch and call it a day.
