Not an Apple guy. Is there something special about their storage? Can't a larger ssd be added?

Seems like a high premium for the added storage over the more common sub $500 costco etc., deals

You can add external storage via thunderbolt or usb c.
You cannot upgrade internal storage or ram (memory)

The SSD is user upgradeable on the M4 models. I did my own upgrade to a 2TB for $260, a fraction of what Apple would charge me. There is also a dock from Beelink that is 80Gbps USB-C if you need to expand even more faster storage.

I went down the similar path. Got a 24/512 M4pro. Bought a caldigit elements TB5 hub and about to buy an OWC TB4 nvme enclosure and a WD black or Samsung eco pro 2TB storage. Would love to do all that under TB5 but those products are way too pricy at the moment.
