They all cook the same so the Target one is more than sufficient. If you're good with no handles, keep the Target one. That one and the Whisper Quiet models are steals at the BF/CM prices if you're just wanting a standard IP.

Additionally, slow cooking sucks on IPs regardless of models when comparing to a true slow cooker. Stick with using the IP for pressure cooking.

I had an Instant Pot Duo Lux for almost 10 years, until I finally upgraded to the Pro when it was last on sale.

Pros of the new model:
  • Seems to come to pressure faster than the old model. Like the indicators for when it's still pre-heating, versus cooking, versus warming.
  • The dial is way faster for manipulating settings and temperature than the old up/down arrow buttons.
  • LOVE the redesigned vent valve. Both the button switch and especially the diffuser put over the vent seal make it a far less perilous process when letting pressure escape. I no longer have to look for a wooden spoon or pair of tongs to twist the pressure release valve to avoid getting burned.
  • The pot handles make the inner pot easier to remove, and prevent the pot from swirling around while stirring. Very nice addition.
Cons:
  • My old model had a removable power strip, which made it both easier to store (less worry about the cord catching on things in the cabinet) and more repairable/servicable. The Pro seems to have an attached cable, which feels like a downgrade.
  • The sous-vide option works, but it's much slower at it than my dedicate Anova sous-vide circulator. I will definitely say it's more convenient to have it in one appliance, especially since the IP pot is much smaller and I don't have to heat up like 9 quarts of water just to sous-vide a couple steaks, but as I said, it is rather slow to come to temp. Accuracy is not perfect, either, but to be honest I don't think it's a deal-breaker if my steak is 123.5 degrees instead of 125.
  • The slow cook option still sucks. I was really hoping it would finally work, because I just don't have the space in my house for a crock pot, however I tried doing a slow-cooked pulled pork recipe for eight hours in the IP Pro, and it was still tough after 8 hours. I had to blast it on high pressure for another 40 minutes to get it tender. Bit disappointing.
For everything other than the power cord, I would say it's a straight upgrade from the earlier IP Duo models, and probably worth investing in if your old model is getting long in the tooth. I'm planning to give my older model to a relative, as it still works just fine after 8 years or so.

I just created a manual temp setting, and ran water for about 3 hours and did a temp check every hour to make sure it's the right temp. I used the pot directly, just remember to clean well prior to mixing the yogurt ingredients.

I only began realizing the full benefit with Japanese Evernew titanium metal pots,which come with vented lids, 1100 ml and 1600 ml. The Chinese Ti backpacking pots are priced from $30 for an 1100 ml but I have not tried them. Capacity claimed is often water capacity and not actual food capacity similar to an I.P. 6 qt I.P. having only a 4 qt liquid cooking capacity. Compare dimensions.

Titanium has multiple benefits. Buy one from Amazon which has a return option. Only by trying can the benefit(s) be understood. An end to burning hands, no exposure to nickel or chromium. Non-reactive. Food safety is increased because leftovers cool faster in Ti, featherweight ( mine weigh 100 and 150 g ) a joy to handle, extremely durable.

Nutritional Boost: substantial. food cooks in its own natural juices which are collected as a delicious broth rather than 25% or more of nutrition being lost to the bottom of main pot and the water used to generate steam. Especially true for expensive proteins like seafood, chicken or beef. You'll surprise yourself as to how much nutrition you've been throwing away cooking proteins with other methods.

Culinary benefit: Concentrate flavors cooking food in a combination of natural juices sauces and seasonings w/o dilution from steam ( covered P-i-P ).

Food which I cook in the 1600ml or 1100 ml Evernew titanium pot:

In one to three minutes 1-3 portions of high protein noodles or pasta for Mac n Cheese with no draining. Red lentils or fish filet from frozen in one minute, Fluffy rice with no burning or sticking, 50-285 g dry rice In 4-6 minutes plus 10 natural release time. One to one ratio of water which I weigh on the kitchen scale for a constantly perfect result and no burned or stuck on rice in the bottom of the main pot.

Whole fresh Artichoke in 20 minutes. Brussels sprouts taste better than when using the steam basket. Dry-roast fresh chestnuts in the shell w/o burning 16 minutes. Egg in a dish inside the pot. Bake.

Frozen food from home prep or the store:
Goodbye smelly space-wasting noisy microwave. Food holds kept warm and moist so is ready when you are This in itself changes one's relationship to food toward healthier eating.

The PlP method gets used every day multiple times a day.

I just got this a few weeks ago and amazon is so wasteful they won't refund the difference so you have to send it back just for them to send out another one at the lower price. Such a waste of time/money/fuel/manpower.

When using PiP, do you need to use a trivet for the small evernew pots and have boiling water in the main pot, or can you just rest the evernew pots on the bottom of the main pot?

Raise the P-iP above above the 1/2 to 1 cup of water added to the main inner pot which is used to generate steam for cooking . P-i-P works like a double boiler but better since the steam surrounds the entire P-i-P and is under pressure..

I use the silicon sling or sometimes the trivet folded + the Ti pot. After cooking I reach in with my bare hands and lift out the open P-i-P with my bare hands. How is that possible?

TOAKS and other China brands are lest costly than Japanese Evernew. For the six qt I.P. the outside diameter of your p-i-p should not exceed 7.5 " The 8 qt I.p. allows the use of wider and taller p-i-p.

Follow the regular procedure for using your I.P. Why boil the 1/2 to 1 cup of water in the bottom of the I.P. first? I start with Pro inner pot on an induction burner. What advantages are there to that? Can you start on the stove or induction with a non-pro? Can the 1 cup of used to generate steam be added as boiling water from a kettle? What happens then?
