Knockout roses are NOT reliably winter hardy in what was zone 5. Over the last twenty years North Central KY has shifted to zone 6b, but zone 4 - unlikely with out REALLY serious winter intervention. For zone 5, unreasonably cold winters killed my six off by ones and twos. VERY pest and disease resistant. Again, babying through a bad winter will probably be necessary.

Going to give it shot here in NC, my last roses were awesome but they all got that horrible disease that makes them look like some alien nightmare, Rose Rosette, and I have to dig them all up!

No, you'll want to wait until spring to plant. Keep them wrapped in burlap in the garage or shed overwinter and water them once or twice a month until spring is here.
