Important to note that it's app only. There are no controls on the device other than a power button.
You do not need to pay subscription to use it unless you want wifi capability. It is free to use via the app/Bluetooth.
Overall it's pretty good but during a cook the app can struggle to refresh if you leave and come back to it so what I do is close out the app entirely and reopen and it has consistently connected after that. Not too bad of an issue but worth noting
They do a good job because a lot of other cooking options cause your flavors to get watered down or cooked off.
these are great, easiest example is for meat- you're not boiling them, you're holding them at specific temps so that the proteins behave certain ways. e.g. 144°F chicken breast is more or less rare and safe to eat because it's been pasteurized, but the meat won't get stringy or tough because that's a side affect of being exposed to high heat.
great stuff- lots of kenji articles on serious eats about it. buying a couple of these to hand out as gifts, lol- annoying to have to use app to set it, but it's 20$ a pop which is less than aldi's cheapo SVs when they have them randomly.

fundamentally all the app does control-wise is let you punch in recipe's details, which you could have just done manually. sure, it has recipes tool but you can just google them or look up guides on serious eats which has kenji's articles that are fantastic.
this does not have all the bells and whistles, but it is an incredibly heap option for a very good device that would let someone get their toes wet with SV. already ordered 3 of these this morning for friends/relatives who i was on the fence for when it was ~35$ shipped via walmart awhile back. have this thing myself, and it's not my go to because you have to use the app to control it vs the touch/scrollwheel interfaces their other models have...but at 20$ shipped that's a steeeeal.
