Aren't the reviews bad? "little shards of wood" etc, not sure if this normal. Is there a specific method to care for those other than hand wash?

FYI ...Bamboo boards are unsafe for raw meat because their porous fibers trap bacteria and they often contain chemical glues that can leach into food.
​Stainless steel and titanium are superior for hygiene because they are non-porous, easy to completely sterilize, and chemically inert. Dishwasher safe!

Not sure on that. I think all wood cutting boards would have that. But, I figure little shards of wood have to be better than little shards of plastic

Bamboo boards are naturally moisture/bacteria resistant. Quit being afraid of your own shadow.
