For anyone else with this question, you can check out multiple times with no limit. I just bought 8 tickets (4 transactions) yesterday for a group. Though it is a bit of a pain requesting the vouchers and keeping track of all the codes.

There's no expiration date on the vouchers so you'll be fine using them in January.

No they dont. The vouchers remove the ticket price when redeemed on AMCs website but they still charge you the convenience fee for each ticket.
