Dual 16:9 displays, like what you have, tend to be a better value. They are usually cheaper while also giving more overall screen space to work with. For this reason, I'd consider ultrawides a bit more of a luxury purchase.
I personally use an ultrawide for productivity work. Most apps and web pages I work with don't make good use of a 16:9 display. There ends up being a lot of wasted space on either side. However, 16:9 monitors don't feel wide enough to snap 2 most widows side-by-side. I end up with a single app per window, lots of wasted space, and more turning my head from side to side.
A 34" ultrawide, on the other hand, works great for snapping 2 windows side-by-side. Most apps have plenty of width like this. And since one ultra wide is narrower than a pair of 16:9 displays, I turn my head less and use up less desk space. I ended up putting an additional monitor off to the side to hold apps that I don't interact with much, but are nice to have always available. Something like Teams/Outlook/Slack for communication, or Spotify/YouTube for background entertainment. But I sit centered on the ultrawide.
All of this can vary based on how you work and which applications you normally use. Some benefit from the extra width offered by a pair of 16:9 displays. Others primarily use one massive application like media creators, developers, or gamers which benefits from an ultrawide.
