I would play then in release order so the modern sections make sense. That order is:
Group 1: Assassin's Creed, Assassin's Creed II, Assassin's Creed: Brotherhood, Assassin's Creed: Revelations, Assassin's Creed III
Group 2: Assassin's Creed IV: Black Flag, Assassin's Creed Rogue, Assassin's Creed Unity, Assassin's Creed Syndicate
Group 3: Assassin's Creed Origins, Assassin's Creed Odyssey, Assassin's Creed Valhalla, Assassin's Creed Mirage*
Group 4: Assassin's Creed Shadows.

I would expect that to take you a couple of hours at least. 😅

If you start playing the games and decide you really don't enjoy them, skip to the next group. The gameplay has gone through several evolutions. The biggest change is between group 2 & 3. That is where the series switched to more of an RPG style.

* Assassin's Creed Mirage is really it's own thing and maybe doesn't fit into any of the groups. It is, in theory, a throwback to the earlier games but doesn't really feel like those games.

I love vikings but was sorely disappointed by this game. I mean big golden chest, what do you find? Raw materials

I really liked this game. Got some shade because it is so vast but that not necessarily a bad thing- lots of hours of new playability and the storyline/acting is solid. Plus the combat and mini-games are (IMO) improved over previous AC's.

They are similar in style. Personally, I found the characters in Odyssey more interesting.
