After buying it I tried to activate this on a galaxy watch fe and was told by redpocket chat that that's not possible. The CSR first told me only apple smartwatches are supported. After I said I was looking for a standalone service, not connected to a phone, he ran the IMEI number and said the device is not compatible. The good part was that it was easy to get a refund even though I had already activated the esim (but not added to the watch obviously).

after doing a bit of research, it seems like the answer is mixed. some people have been able to stack, others weren't able to, and others resorted to contacting customer service to do it manually

Stacking for renewing current plan has been hit/mostly miss since RP introduced it (a couple years ago?). See some old RP threads here. More misses than hits. Plus, it incurs the recovery and admin fees, vs ebay sales tax (at most). And this is a new plan, anyway.

"Why was my 3rd order canceled?

At this time, you can only make 2 orders (1 current and 1 renewal). If you place a third order, it will be canceled and refunded. Any further orders after that will also be canceled and refunded."

I manage 5 lines for myself and family. That means RedPocket would not work for me.

I placed three separate eBay orders under 1 account. I activated one right away and saving the other two till my current plans expire since we have 90 days to activate.

Not saying those other two won't get cancelled but they haven't yet and they were ordered last week.

No it will not stack ever. It will override your current plan and the 1 yr cycle will start as new. You will lose any remaining balance on your current plan.
