Single probes are never the best choice for BBQ and smoking. At a bare minimum you need one probe for the temperature just outside of the meat to be cooked and one, but almost always more, probes to be placed inside the meat.

Your temp from the oven/grill is more accurate than the ambient temp sensor on the probe that's pressed up against a cold piece of meat anyways.

I would complain about the cables though. Those are annoying to deal with and more stuff you have to clean. Get wireless if you're able too.

I agree with this. I would definitely get at least a 2 probe device and even then, it would be for cooking something like a rib roast or turkey, to have 2 probes in different parts of the meat. This also assumes cooking in an oven, which is generally easier to control temperatures in. I'd want at least 3 probes for a smoker as the analog thermometers are not really the most dialed in for that activity. And to the other person's point, you'd definitely want to make sure that the probe is not "pressed up against a cold piece of meat" for the temperature inside the smoker.

Right for double the price I'd get the wireless one.
