Do 4k monitors make a 1080p input look native since it is exactly 2x the vertical and horizontal resolution?
They can with integer scaling enabled: https://tanalin.com/en/articles/integer-scaling/

how is the LG 45' 5K2K ($1350) vs 2 of these Dell 32" 4K? ($1000)It is definitely cheaper and more pixels to get 2 of these DellUsing it mainly for office work and photo editing
Depends on your preference. I don't like having the bezel in the middle in a dual setup (I've had dual setup for many years) so I opted for the Innocn 40" 5k2k and it's been amazing. I have it paired with a vertical 27" 1440p monitor off to side. I'm all productivity and no gaming.

If I will not be using this for gaming, is it true that I'm better off with an IPS screen instead?
Depends on what you are using it for other than gaming. I'm not a fan of the for text heavy work as the text isn't sharp because of the non standard pixel layout. You can read rtings review on it as well about that. I would assume for photo or video work it's probably pretty good but that isn't my domain.

Would this monitor be good for video editing and intense working -- spreadsheets/docs
no oled is recommended for word processing and number crunching due to static and bright white backgrounds

This seems like a great option for consoles. I'm considering one myself for Xbox.
