2 pieces isn't the end of the world but likely you'll have to deal with the crease in between. I put a mat over where it meets, so it doesn't bug me. That's why one piece is preferred. But usually cost more because two pieces are easier for companies to ship.

in some cases the two pieces are not well supported or put together. Hence one piece may be stronger.

Looking for an adjustable desk with drawers but not on top like this. Seems like it takes too much space on the desktop
