Pasta that is formed/cut with a bronze die vs the more commonly used material stainless steel (due to its durability/strength/rust resistance/ease of cleaning/etc) results in a slightly rougher surface texture which helps a little more sauce stick to the pasta resulting in a slightly more flavorful final dish. Look closely at the surface finish of all the different dry pasta boxes or bags at the store next time and you can usually tell which ones are made with bronze dies without looking at the package labels because their surface looks like it was made when the dough was slightly too dry where the pasta surface has a bunch of tiny cracks and curled bits of pasta all over it instead of being totally smooth.
