Most of these filters are changed every 1-2 years, usually measured between 1000-2000 gallons. The filters should be less then 100 that's the average, I have the Costco one it's about 50 bucks a year average for all the water I want. I mostly drink water

I only have a wire on a switch attached to the garbage disposal. Any easy way to tap into that and have always on power for this?

Is the disposal plugged into a duplex outlet under the sink or hardwired?
If there is a duplex outlet, it would be possible. If the plug has a neutral wire coming to it, it would be possible to split the duplex and have one outlet switched and one outlet always on. Not terribly complicated, if you are comfortable doing DIY electrical. If not, shouldn't cost too much to have an electrician do it.

Do these types of systems have a bypass where you can have the water filtered or not depending on a value or a switch or something? I've never used one, but I would want to be able to have some water be filtered (the kind I'm drinking, obviously) and some not (rinsing out the sink or washing something).

You don't feed the output to your main sink faucet, it goes to a separate faucet (as shown in the product photo).

Don't buy into these proprietary filter systems. They hose you on replacement filters just like inkjet printers. A standard RO system is often on sale for around $150, they use standard sized filters $90 for a 3 year supply.
