I used to work in a professional kitchen and our sauciers used to use larger versions of these dishes all the time.

Wife and I used one of these (her idea) for about a year. Not too big of a hassle, butter stayed fresh.
We eventually went back to a butter dish that has a lid that comes on and off - no difference really. It's a unique dish - conversation starter if you've got guests. We go through a stick of butter every 3-4 days so long term freshness isn't really on our radar.

Fortunately, not everyone in the world is like you.

Keeping the butter spreadable is nice, although I'm not sure this would completely replace my countertop butterstick, since it's much easier to portion the butter for cooking when it retains its rectangular shape with the package markings.
