This may be a dumb question. Do the electronic devices like TV remote, Roku remote, or even remote control car, does it matter if it's NMH or Lithium?

No As long as the battery isn't over 1.5 volts and it fits you are good to go.

Depends on the device. NiMH is only 1.2-1.4V. Some devices won't like the lower voltage especially when used as series of 4 and will give a 'low voltage' warning or stop working early. Lithium AA has voltage controller so they output ~1.5V as it discharge offering more stable voltage.

Remotes probably won't notice. RC cars will as the top speed will be lower. However, lithium AA doesn't like to be discharged at high current.

A friend has been testing a set of 8 AA of these in a trail camera. It would go through alkalines every 2-3 months. So far, these are on month 3 in sometimes Sub-Zero temperatures, and they still show a full charge. Very well worth it in lieu of alkalines and NiMH.

EDIT: I didn't realize until recently that these will show full until they're completely drained. That's because there is a buck converter inside to reduce the battery's normal ~3.7v down to a steady 1.5v. It keeps it at that 1.5 volts regardless of the source voltage, until it is depleted. So you can't depend on a battery gauge to tell you how much charge is left, unfortunately.
