Teflon and its friends definitely last longer and stick less, but that's because they are chemically engineered to do so - and the stuff that makes them that way is the stuff they is (potentially) unhealthy because we ingest it over time.
Ceramic is a good middle ground. It's natural but adheres less to stuff but it's not quite as good. It's also
not as resilient and so you will need to replace them more often. That's the tradeoff.
Stainless takes a little more work between cooking with it to get a nonstick effect and cleaning it(using Bartenders Friend) but it's worth it. No worries about the chemicals and they look just as good now as they did when I bought them.
Having said that I considered buying a ceramic skillet for my daughter but when I started reading about how they don't last all that long I changed my mind.
