For Rocksmith, I got a Squier Sonic Mustang HH and got it set up at the local music store. Judging with my completely beginner guitar skills, it works and the game recognizes it. I got it on the principle that dual humbuckers should be better at note recognition in the game. I have nothing else off the top of my head to add, maybe because I don't actually know how to play one.
