Also, there have been multiple updates to the original Special Edition trilogy over the years that (rightly, in my opinion) piss people off because it's like erasing the work of past actors.
1) All of Boba Fett's lines were re-done with the actor that played Jango Fett
2) Sebastian Shaw's ghost being replaced by Hayden (this change makes no sense lore wise)
3) At the end of RotJ, Vader now awkwardly cries out "Noooo!" as he lifts up Palpatine and throws him into the pit. This, like other changes, was not present in the original Special Editions. It was another change added in a later blu-ray release.
For just about every other movie, you can get the original theatrical version, and the worst thing you'd have to deal with are off/bad color gradings (which most people won't care about or notice). You can no longer get the original theatrical version for Star Wars by legit means.

I laughed so hard the other day when I was watching RotJ on Christmas with the family, and heard that inserted, "No!." I had seen the originals dozens of times as a kid, and really hadn't watched RotJ since Lucas decided to corrupt the original trilogy again post-prequels, so every time I encounter something he changed, it's awkward and ruins the experience.
The Star Wars films are uniquely bad when it comes to a director meddling with the original film. Watching the Project 4K77 films makes for a much more compelling experience. All that CG turns it into just another crappy Hollywood action flick.
