Looking up the price history indicates the last 3 months the price has hovered around the $650 range and that it has been listed for the full $1300 before that. $600 is an all time low.

It's pretty much always this price
It's NEVER been this price with two 100w panels.

Why get this with 2x 100W panels when the 200W panel combo is the same price? Weight and portability only?

I think so. I have a Renogy 220 watt folding panel that is 72 inches by 28 inches. Don't know the exact dimensions here, but it is probably pretty similar.

I've always debated on getting these but besides for prepping or camping reasons, what do you guys use it for? Is it worth it to get?

Amazon has the comparable Bluetti on sale for $394. Add Renogy or other solar panels and it'll be less. My buddy that camps out of his 4runner months on end thinks the Bluetti is more durable.
I use the Bluetti as a power outage backup for my CPAP. I'll get some solar panels when the need arises.

I'm curious, too. Can someone translate what this can power and for how long?

I've had this unit since July but purchased a single 200w panel from Harbor Freight which was less expensive and more compact. I live in an area where trees falling on power lines is a common occurrence so for me it was a good choice. The Jackery powers my Samsung French door refrigerator for about 8-10 hours as long as no one opens the doors that often. I've also used it to power up my coffee maker and electric skillet ... but won't power both at the same time. I'm happy with my purchase but just bought a large Oupes and frankly their customer service is much better.

I can't think of a reason to get this. I have two EV cars that serve this purpose for camping trips and power walls for home backup but this deal is too good. Give me a reason to buy it

Prep and camp for sure. I tend to take one to power my laptop for remote work from my vehicle, while on the road.. no need to find a place to plug in once power is low. My truck has an outlet but I'm not always in my truck.
