Never heard of AOOSTAR. How's the brand reputation? No AceMagic-similar practices of preloading with malware?

I'd also be looking to load Linux onto this to be my new Kodi box. I'm assuming it should be golden, since it's both AMD CPU and GPU?

I'm currently using an AOOSTAR GEM12 Max, which I bought a year ago. It's been reliable with no issues at all in a whole year. It came with preinstalled RAM and SSD. It's a good little PC that can play some games, but it's definitely not comparable to the large aquarium gaming PC I also own. I love this silent, tiny PC for everything except heavy gaming; I only run the big box for AAA titles when really need the 4k resolution with high FPS.

It handles everything except heavy gaming. It's my daily driver for web surfing, coding, and often editing 10–15 minute video clips in Full HD without any issues. It runs a 4K monitor with no lag at all. Though 32GB probably critical parameter for iGPU configurations.
