I would hold out for a better CPU or a better price. The Core 5 120 CPU is essentially a rebadged i5-12400 [tomshardware.com]:

[T]he Core 5 120 looks to be a rebranded Core i5-12400 with a slight boost clock speed upgrade. ... With the Core 5 120, Intel seems to essentially be throwing a fresh layer of paint over an old house, hoping to appeal to buyers.

If you add up the parts, just the ram could set you back $200, the motherboard another $100, NVMe $100 and the GPU $250. That's roughly $650 without the PSU, CPU and Case. It's okay in my book.

Why would you subtract anything from the purchase price, the purchase price is what's coming out of your bank account for item+gift card, and that's what you pay tax on.

The commonly used phrase in such cases is "if you treat the GC as cash". You can use that logic if you have a straightforward way of converting the full value of the gift card into cash or a cash equivalent.

Say, you are immediately using it to buy software, another part or device which you had been planning to buy anyway. Then the gift card directly decreases your total cost.
