supposedly, red lentils cook fast and dissolve into a creamy mush, ideal for thickening soups, dals, and curries, while brown lentils are heartier, hold their shape longer, have an earthy flavor, and are great for salads and stews where texture is desired; the key difference is texture, with red breaking down and brown staying intact.
if you go to south asian grocery store, they sell 4 lb and 7 lb packs on sale (called masoor daal) few times a year. Per pound it comes to be about a dollar. This is not a good deal unless you want to try a small qty.

any clue how the ones from asian grocery stores compare to the ones at whole foods in terms of taste and quality? if they're the same, i'll probably start getting them from the asian grocery stores

I've never tried the red variety. I like lentils though and they cook way quicker than normal beans.

These are shelled (half) lentils that provide crap-tons of fiber to anyone's diet. If you are listening and want a healthier diet ... buy as much of this as you can afford. Your colon will than you later!

Red lentils dissolve in like 10 minutes. Brown lentils I like for soups, for salads and just general eating I like the texture of french green and black lentils the best.

The high levels of glyphosates will thank you as well.

There is always a higher chance of getting a product with high levels of heavy metals and contaminants from imported foods and spices from places like India due to their more lax procedures, factory processes and sanitation. Lentils are accumulators so you have to be more mindful. I have visited several manufacturing plants around the world. Even in the US most of these products sit on the floor in grain bin, silages with millions of insects, bugs, rocks, contaminates. The engineering behind this is absolutely mind blowing and amazing but https://pubmed.ncbi.nlm.nih.gov/35060792/ Always wash beans and rice first!People often mistake people washing rice to 'destarch' as its a leading belief among American Youtube Culinary influencers but contrary, its to remove contaminants, bugs, rocks etc.
