The extra memory for dual channel capability would be nice, but it'll already be such a step up that I don't think you should feel forced to grab more memory right now. I have a 7600x3d and 2 x 16GB. I rarely see my system use more than 16GB of memory. While I don't know how important dual channel is, and how much performance would be left on the table, it seems to me the biggest boost in performance would be jumping onto an AM5 platform with a modern cpu. If you can stretch your budget to $649 then I think the best value for unnecessary performance upgrades is the 7800x3d 32GB bundle (9800x3d will be higher end for another $100), but that's more than double the cost for not a ton of increases in performance. It'll be up to you how much value that brings you, especially if it's for entertainment.
TLDR:
$300 gets you a huge leap up to AM5 (AMD's current platform), a 6core processor with the x3d cache (great for gaming), and 16GB of DDR5. If you need a new setup or are CPU limited right now this value will be very hard to beat.
This matches the old Microcenter bundles for a 7600x, motherboard, and single stick of RAM, albeit this processor would be better in gaming thanks to the x3d cache. The next kit up to solve the single channel RAM problem would be the 7700x kit, for $250 more, for the 7800x3d kit for another $350.
