How to buy an authentic Xtra Virgin Olive Oil:

-The bottle must of dark color as the Polyphenols(antioxidants(the healthy stuff)) are sensitive to light and breaks down if exposed.
-The source of your olives have to come from the same source/country. Different batches from different countries means that the olives are not fresh and can also contain undesirable ingredients (mold, insects, chemicals...)
-The bottle must have a date when it was packaged and a date of degradation(olives oil doesn't spoil but all the goodies will fade away.
-A warm or hot storage area is a big no no for any type of olive oil but especially Xtra V.O.Oil which is the most sensitive of all types.
-There's no such thing as Organic olives as no one in the world sprays the olives with chemicals.

Long story short, do not buy from Amazon and add some bucks to buy a better quality.

edit:
-For brands, I buy and love Terra Delyssa which is an authentic brand and a lot of chefs love it. You can also go with a Kirkland option from Costco but just avoid their Organic one as you're just paying for extra. The California Olive Ranch is also good but the weather is different from the Mediterranean one which adds a dash of sweetness and makes it taste less bitter and acidic.

I am a retired chef and use his as my cooking oil and find it good quality an it isn't much more than amazon brand.... Pompeian Smooth Extra Virgin Olive Oil sold on amazon as well.

nice! the only thing i've got is... with respect to organic olives, arent they refering to having it grown out of organic soil... nothing to do about the item not sprayed w/ chemicals.

For $8.05 with 15% s & s, it's fine to have as a back up. Personally, I can't tell the difference. It's not like I'm drinking it by the glass.

Which olive oil at Sam's is single origin? I checked all the ones online they sell and all list and/or a handful of countries. Pompei oil is the only one that does not show a picture of the label or state country of origin.

Given my taste buds are not as sensitive as most people here, will "real" virgin oil make much of a difference for me? Real is in quotes because I have no idea what that means.

Blended olive oil can be mixed with any seed oil. More cost efficient to buy the cheapest seed oil in the store.

- There's an insect called the Olive Fruit Fly! A majority of olives test positive for pesticide residual, even if the levels are relatively low and unconcerning.

- Dark bottles are indeed much better in a retail setting. But when buying online, the bottles are stored and shipped in cardboard boxes. Then you can store the bottle in your pantry, meaning there's only light exposure when you have the bottle out.

- Shipping oil from multiple countries may take much less time than a bottle sitting in a warehouse or on retail shelves. While higher quality product is usually reserved for narrower origin bottling, that doesn't mean blends are inherently lacking in freshness and basic standards. Plus cheaper oils sometimes even have the advantage of selling much faster.

I check dates and try to stick to brands I trust, but one of the biggest freshness variables is under our control: how long it takes to finish the bottle after it's opened.

Olive oil has fairly low smoke point, so it's not great for high heat cooking.

Better alternatives are butter(for pan frying), tallow, ghee, coconut oil, and avocado oil.

There's a small chance that oil advertised as olive oil is actually mixed with a cheaper seed oil, but that rarely happens in the USA.

The more likely issue is that oil sold without a single point of origin and harvest date are not fresh. Over time olive oil oxidizes and goes rancid (because it contains monounsaturated fat; only saturated fat is inherently stable). This has negative effects on both health and flavor.

This is possible, but it's rare in the USA. The more common issue with blended oil is that it may not be fresh.

Its smoke point is high enough to use for frying at 375. 400 is probably pushing it. But, its actually one of the very few oils that won't produce toxic aldehydes when you overheat it, unlike most other oils, particularly seed oils. Once tallow becomes more affordable in a year or two you can use that for frying. It is superior.
