Worth grabbing a sams club membership for this? I've not got a grill and would like having one, especially if the power goes out and I can still cook food

The rust review is a single review about the griddle rusting. I suspect they did not season and maintain it properly.

the people over at grill grate https://www.grillgrate.com/ can custom cut you grates and they are awesome grates if you look into their grates.

if people cant take good care of a cast iron frying pan, they shouldn't get a cast iron or similar grill

What about them? Most of the negative reviews have nothing to do with the product (shipping issues) and single bad review of the actual product just looks like a poorly maintained griddle.
The overall low number of reviews and steep discount is concerning though. Combo units are generally worse than two dedicated products but at this price thats not a concern.
